Gluten-Free: Citrus-Lentil Spinach Salad with Sunflower Seeds
Lentils carry zinc. Spinach provides lutein and zeaxanthin. Citrus delivers vitamin C. Avocado contributes healthy fats that help the body absorb carotenoids. Sunflower seeds provide vitamin E.
Ingredients (2 servings)
- 1 cup cooked green or brown lentils, cooled
- 2 cups fresh baby spinach
- 1 cup chopped cucumber
- 1 medium orange, segmented
- 1 avocado, sliced
- 2 tablespoons sunflower seeds
- 2 tablespoons chopped parsley
For the dressing
- Juice of 1 lemon
- 1 tablespoon olive oil
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine lentils, spinach, cucumber, orange segments and parsley.
- Whisk lemon juice, olive oil, honey, salt and pepper until smooth.
- Toss the salad with the dressing until evenly coated.
- Top with avocado and sunflower seeds before serving.
